Sweet Treat

Everyone deserves a sweet, indulgent treat today. And if it happens to be relatively low-fat (for a cookie), so much the better, right? These cookies are perfect for when you’re craving something fudgy—they mix up fast (no waiting for butter to soften!) and bake in minutes. Plus, they’re made from ingredients you probably already have sitting around the pantry. So go ahead, treat yourself—you deserve it!

 

Chocolate Walnut Cookies

Adapted from a recipe by François Payard that appeared in Food & Wine magazine

Makes 12 large or 24 small cookies

 

2 cups walnuts, chopped (hazelnuts also work well)

3 cups confectioner’s sugar

½ cup plus 3T unsweetened cocoa

½ tsp cinnamon (optional)

¼ tsp salt

4 large egg whites at room temperature

1T vanilla extract

 

Preheat the oven to 350 degrees

Toast the walnuts about nine minutes, until slightly browned and fragrant.

Whisk sugar, cocoa, cinnamon (if using), and salt. Add the walnuts. Add egg whites and vanilla. Beat until the batter is just moistened.

Spoon the batter onto a silpat-lined baking sheet in 12 or 24 mounds.

Bake for about 20 minutes, shifting the pan from front to back and top to bottom halfway through and checking to make sure the cookies don’t burn.

Slide the silpat onto a cooling rack and let cookies cool completely.
